Analysis of Proximate Value and Functional Properties of Echinochloa frumentacea (Barnyard Millet)

Barnyard millet is a minor crop that is traditionally cultivated and consumed in various parts of the world, particularly in Asia and Africa. The studies on nutritional and functional properties of barnyard millet revealed it to be an excellent source of nutrients, and also exhibited good functional qualities, making it a valuable ingredient for various food products. In contrast, limited research on barnyard millets inhibits their promotion and utilization in food systems. This study investigates the nutritional and functional properties of locally available barnyard millet, exploring its potential as a sustainable and nutritional food source for promoting health and well-being. The proximate analysis and functional properties were analysed using standard IS:1155-1968/4333(2):2002); IS:1656-2007:2012 and AOAC methods. The analysis findings of proximate composition of moisture content (10.85 %), crude protein (11.13 %), crude fibre (2.54 %), crude fat (5.56 %), crude ash (3.23 %), and carbohydrates (69.23 %), and the total energy value is 371.48 kcal/100g. The functional properties include water and oil absorption capacity (1.05 and 0.92 g/g), bulk density (0.59 g/ml), least gelation concentration (6%), and amylose content (20.19%), making it suitable for various food applications. The study highlights the potential of this climate-resilient crop as a nutrient-rich food source, contributing to food security and sustainable agriculture.
